Thai Basil Chicken
3-6 serrano chilis lightly chopped
8 garlic cloves lightly chopped
¼ cup olive oil
1lb. ground chicken (or beef)
2 fresh red chilis cut in half lengthwise
1 tbsp oyster sauce
½ t. fish sauce
¼ tsp. soy sauce
½ cup sweet thai basil leaves lightly chopped
Pound chilis and garlic together with mortar and pestle or in a food processor with some oil. Heat all remaining oil in wok or large skillet. Add chili/ garlic mixture. Stir fry one minute. Add ground meat and stir fry for one minute. Add red chilis, oyster sauce, fish sauce and soy sauce. Stir fry two minutes. Make sure meat is cooked through. Add basil leaves and serve.
Can be served in iceberg lettuce as lettuce wraps or over steamed jasmine rice.
Garnish with peanuts or sesame seeds.
