Garlic-scented Mashed Sweet Potatoes

½ cup coconut milk

1 small clove garlic, minced

1/8 teaspoon red pepper flakes, or more to taste

½ teaspoon salt

1 teaspoon sugar

2 pounds sweet potatoes, peeled (if desired) and cut into large dice

ground black pepper to taste

1 tablespoon fresh cilantro, coarsely chopped

garlic mashed sweet potatoesCombine coconut milk, garlic, red pepper flakes, salt, sugar, and sweet potatoes in a 3- or 4-quart saucepan and cook, covered, over low heat.  Stir potatoes occasionally; cook until potatoes fall apart when tested with a fork.  Remove pan from heat and mash the potatoes by hand with a masher.  Stir in the pepper and cilantro and serve immediately.
