Quinoa Tabouli Recipe

Ingredients: (serves 4)

1 cup quinoa

2 cups water

1/2 tsp. sea salt

1 cup cucumber, diced small

1/2 cup parsley, finely chopped

1/2 cup scallions, thinly sliced

Lettuce leaves as a garnish


  1. Cook quinoa and sea salt in 2 cups of water, until translucent; remove from heat and let sit 10-15 minutes to become fluffy.
  2. When cool, add cucumber, parsley, and scallions.
  3. Add mint-garlic dressing (see recipe).
  4. Chill in refrigerator before serving.
  5. Serve on lettuce leaves.


Mint-Garlic Dressing Recipe (Good with quinoa tabouli)


1/4-1/3 cup fresh lemon juice, to taste (start with less)

1/2 cup organic, unrefined oil

1-2 cloves garlic, minced (or to taste)

1 Tbsp. fresh mint leaves, minced

Add lemon juice, mint, and garlic in a blender. Slowly add oil to emulsify.
